Lutu-Lutuan Portion: Lazy Burrito



Whenever there's an opportunity to cook, I ensure to grab it and put my best in it. When I say 'best', I mean there's shouldn't be any short cuts. HOWEVER, we need to consider the resources and the availability of the ingredients. So please forgive me with this recetas de comida mexicana perezoso, burrrrrrrrrrrrrrrrrrito.

THE INGREDIENTS

the filling
1/2 kilo lean ground beef (preferrably grass fed)
2 medium size bell pepper (1 red and 1 green), finely chopped
1 pack of McCormick Taco Seasoning Mix, dissolved in 1 cup of water

the wrapper
12 small standard size (6 inches in diameter) tortillas, grilled (or 6 large standard size, if you wanna go grande)
1 bottle any cheese sauce/spread (preferably unsalted)

the salsa  (for garnishing)
1/3 kilo tomatoes, seeded
1 medium size onion
3 tbsp fresh lime juice (or 2 tbsp white vinegar)
1 tsp ground black pepper
2 tsp chopped cilantro
1 tsp salt
1 tbsp hot sauce (alternative to pickled jalapeƱos)

THE COOKING

1. Brown the ground beef in a large pan over medium heat.
2. Remove the extra oil.
3. Add the dissolved seasoning. Simmer for 10 minutes. Stir occassionally.
4. Add the bell peppers then simmer for 2 minutes. Set aside.

5. Put all the salsa ingredients in a food processor or a blender then mix until you achieve your desired thickness. (TIP 1: Don't over mix the ingredients to avoid making it too watery) (TIP 2: If you do not any have any food processor or blender, finely chop all the salsa ingredients then press using your clean hands.)

THE PRESENTATION

1. Spread cheese on a grilled tortillas. (Don't put too much spread to avoid too much salty)
2. Put on the cooked ground beef evenly and fold once.
3. Garnish with salsa.
4. Enjoy! Best served with a glass of ice-cold soda!

Second Thoughts Make Sense

There was a time that I thought of having without feeling anything. *sigh*

pain
stress
tears


*light bulb* Then, I realized that life is a roller coaster of emotions. Nothing you can achieve unless you ride in. In an event that you go astray and break some of your parts, you know He is there ready to fix your broken pieces. All you gotta do is call. He knows when to let you continue the ride. Stop overs are necesarry to get rested and to fuel-up. However, never be stock; get back the ride. Always look back and learn your lessons which you can use as go along your crazy ride.


Join the ride • Pause for a while • Refill • Move forth • Look back
